Gluten Free White Chocolate Chip Peanut Butter Cookies

My official first Gluten Free recipe. here it is: 2 cups Peanut Butter (I always use Skippy but any peanut butter will work) 2 cups firmly packed light brown sugar 2 large eggs 2 tsp. baking soda 1 cup white chocolate chips Directions: 1. Preheat oven to 350°. In medium bowl, with wooden spoon, combine all ingredients except chips until blended. Stir in white chocolate chips just until combined. 2. On ungreased baking sheet or baking sheet with a Silpat Mat, drop slightly rounded teaspoonful about 1 to 1 ½ inches apart. (Do not flatten) 3. Bake 9 minutes or until cookies are puffed and golden. (Cookies will be VERY soft.) Place baking sheet with cookies still on it on a wire cooling rack and let stand for 5 minutes. Remove cookies from sheet and cool completely.

Amazon Link: www.amazon.com Jordan’s Chocolate Cookie Mix You will need: 1 box Jordyn’s Chocolate Cookie Mix 1 cup soften butter or substitute 1 cup packed brown sugar ¾ cup granulated sugar 3 egg white or 1 TBL flaxseed + 3TBL water replaces 1 egg. You can also use an egg replacer. 1 TBL gluten free vanila For a softer cookie, add 2 TBL applesauce. You can also add shredded coconut, GF peanut butter chips, chocolate chips. Or roll into powdered sugar before baking. USE for ice cream sandwiches. Pre heat oven to 375 degrees. Instructions: Mix Sugars, butter, vanilla, egg whites or egg substiute and applesauce together. Add Jordyn’s Chocolate Cookie and cream together. Drop by spoonfulls or roll into balls and place on ungreased cookie sheet. Bake 10-12 minutes. Don’t over bake. Cool on a wire rack.
